Baby casseroles - general principles and methods of preparation

Everyone has known the taste of casserole since childhood. It is introduced into the child’s diet starting at one year of age. It is very healthy, it contains fruits, cereals, vegetables, cottage cheese, and this is a source of proteins, microelements, pectins, vitamins and other useful substances. It can be sweet, with cottage cheese, fruit or semolina, or not sweet, with vegetables, fish, meat. The smallest ones cook it by steaming it – this way its consistency becomes softer and more tender. Usually children eat it with pleasure, because it is very tasty. To make the casserole more juicy, pour sour cream or jelly over it. A sweet casserole can be made from oatmeal, semolina, rice, cottage cheese, and bread. By the way, if you have buckwheat, semolina or oatmeal porridge left over from breakfast, you can easily prepare a new dish from it - a casserole.

What are the benefits of a vegetable?

If we talk about the nutritional value of garden crops, its main advantages are considered to be the following:

  • The product is low-calorie, its nutritional value is only 24 kcal. per 100 g. This allows the vegetable to be used in a low-calorie menu and introduced into the diet of those who are overweight or trying to lose weight.
  • Contains a high concentration of pectin, plant fiber, which is easily absorbed by the body. Zucchini fiber gently relaxes the digestive tract, promotes the excretion of feces and is considered an excellent preventative against constipation. The pectin of the culture gently envelops the intestinal and stomach mucosa, easily removing toxins, cholesterol, salts and waste.
  • Zucchini is rich in vitamins A, E, C, PP and H, as well as group B. Its pulp contains calcium and phosphorus, magnesium, potassium and sodium. In order for the vitamins to be fully preserved, it is enough to subject the vegetable to minimal heat treatment. Young zucchini will become soft and edible if you boil it for only 3-5 minutes.

This unpretentious and healthy vegetable is unique in that it does not cause allergies in the child, like many of its fellow gardeners. This allows it to be used for complementary feeding of children prone to diathesis, dermatitis and other types of allergic reactions.

Because it has a pronounced sweet and sour taste; not all children will like fresh berries. Therefore, cherry compotes, jelly, and casseroles are prepared for them. Older children and very young children will eat this casserole with pleasure. If the child is allergic, replace chicken eggs with quail eggs, doubling the quantity. By the way, this casserole can be made with other berries and fruits.

Ingredients : 300g cottage cheese, ½ cup sugar and cherries, 3 eggs, butter (grease the mold), 2 tbsp. decoys.

Fish soufflé for children from 1.5 years old

This dish is suitable for children and older children. It contains many useful microelements, for example, polyunsaturated fatty acids and B vitamins. Adjust the density of the soufflé using bread or breadcrumbs. As a side dish for kids, make vegetable puree or boiled noodles.

To prepare 6 servings, take:

  • 400 g fillet of any fish;
  • 1 egg category C0;
  • 2 tsp. flour for sauce;
  • 100 ml cream;
  • 50 ml water (or milk) for stewing;

Cut the fillet into pieces and place in a frying pan. Pour 50 ml of water or milk into it. Simmer until evaporated for about 10 minutes, while lightly covering the pan with a lid. If you are going to add vegetables, chop or grate them. In this recipe I added 1 carrot. It turned out to be about 2 tablespoons. Place the vegetables on the fish, but do not stir.

Grind the finished fish with carrots in a meat grinder or chop using a blender. Add raw yolk and stir. Add salt to taste.

To make the sauce, place 2 teaspoons of flour in a frying pan that has not been washed after fish and pour in 100 ml of milk or cream. If using milk, add a teaspoon of softened butter. Bring the sauce to a boil, wait until it thickens. Place minced fish in it and stir. Add salt to taste. If desired, add two tablespoons of breadcrumbs or a crust of soaked bread. This will help increase the density of the finished dish.

Pour the egg whites into the cooled mixture, whipped until foamy. Mix everything carefully with a spatula. The dough is ready. Grease the mold, pour the mixture into it, place in the oven preheated to 170 degrees for 25 minutes and let the dish brown.

Ingredients : 1 small zucchini, 100g cottage cheese, 2 eggs, 1 tbsp. semolina and butter, some herbs (optional).

And the fresh ones are peeled and cut into longitudinal slices-rings. Place the boiled zucchini pieces in a colander and lightly press with a fork and squeeze a little. This is done in order to get rid of excess liquid. Then they are crushed with a blender.

Add eggs, softened butter and cottage cheese to the zucchini puree. Mix. You can use a spoon or a mixer. Add salt and chopped herbs.

Grease the mold and pour out the dough. If the molds are silicone, there is no need to grease them. The casserole won't stick. Bake in the oven (180C) or steam for about 40 minutes. It turns out tastier in the oven, but for small children under 2 years old it is better to steam it.

Because The casserole is prepared for children; it can be decorated by adding eyes, a nose, and a mustache. Or make a sun. To do this, use green onions, radishes, tomatoes, halves of olives or dark berries.

How to choose the right cottage cheese

When choosing cottage cheese for a child, you need to pay attention to the following quality indicators:

  • a good quality product has a white, creamy tint that does not give off a green appearance;
  • it tastes non-bitter and non-sour;
  • the smell is pleasant and without the feeling of acid;
  • high-quality cottage cheese does not separate, has a delicate, slightly oily consistency, not runny, but not too dry.

High quality cottage cheese

High quality cottage cheese

You should not buy cottage cheese at the market from a random seller. The greatest danger of such a product is bacteria. Once in a child's body, they can cause severe poisoning. If you buy cottage cheese in a store, you need to pay attention to the packaging and information about the product.

Attention! You should not buy your child cottage cheese from which the fat has been removed - calcium is best absorbed in the presence of fat.

Purchased cottage cheese is tested for quality at home. By dripping iodine tincture onto a piece, check to see if starch has been added to the product. If added, iodine will change color to blue. If a piece of cottage cheese, lying on a saucer at room temperature, turns yellow and dry, then it is real.
