I have amazing childhood memories. Breakfast included blood sausage, fish cakes, stewed fish, dumplings, meatballs, liver and onions.

All of these wonderful foodie memories happened at my grandparents' house.

My grandparents were poor. A very low state pension and no extra money meant they managed their money well and kept their lives afloat.

My grandfather often bought me big, second-hand items, and he cooked for me all the time.

But what they lost in money they made up for in love, and I loved my grandparents very much. Unfortunately, my grandfather passed away in 1993 and my grandmother followed him in 1998.

One thing that will stay with me forever is my grandfathers cooking. It was amazing and besides his legendary fish cakes, he also made amazing liver and onions. They weren't rubbery, they tasted good, and I always wanted to eat them.

My parents were never happy because, along with black pudding, I discovered these flavors away from them in foods they hated.

But they accepted it and even fried a piece of black pudding when I asked.

Now as an adult, I can't believe that something so delicious costs so little. When I bought it from this recipe, a large pack of chicken livers only cost us a euro, half of what we pay for a small pack of chicken wings….

We rarely have them because we are addicted to chicken liver pate, so any chicken liver ends up in the blender!

But in this recipe, I'm upgrading my grandfather's liver and onions and cooking them much faster in the Instant Pot. Forget all that rubber meat, this is the real deal.

I most often use cornmeal as a thickener (that's what we use), and another option is cheap gravy granules. But if you don't have a bite of homemade cheese sauce, then same! I like to serve mine on a large cast iron platter and then we can all share it, or we can put it back in the oven to keep warm.
