Milk vermicelli: recipe for children - cook noodle soup in milk

Milk soup with noodles: traditional recipe

As already mentioned, this dish can be prepared with any type of pasta.
But since vermicelli cooks the fastest, we will choose it. Saving time is especially important in the morning when preparing breakfast. Cooking time: 10-15 minutes.

The recipe is for 4 servings.

Compound:

Cooking

  1. Boil water, add a little salt, add vermicelli into it and cook until half cooked (according to the cooking time indicated on the package: just divide it in half). Usually this is 3-4 minutes. Place the finished vermicelli on a sieve or colander, let the water drain, but do not allow the noodles to stick together.
  2. Place the pasta in boiling milk and cook for the remaining half of the time required to cook the noodles (that is, another 3-4 minutes).
  3. At the end of cooking, add salt (if you are making unsweetened soup) and, if desired, a piece of butter (15-20 grams). You can also add sugar now, but it’s better to add it directly to the plate. What if one of the family members doesn’t like sweet soup?

Pour the finished dish into plates and serve. We will put sugar, berries, jam and other additions on the table so that each family member can give the soup the desired taste. And if you are concerned about the calorie content of your food, you can do without the additions. The dish is fine without them.

Milk-based soup with homemade noodles is ready.

Selecting the ingredients

The standard composition of the first course is pasta and milk. Experts advise young parents to start complementary feeding with vegetable milk soup. It is less allergenic than the first one with noodles.

The success and quality of the prepared food depends on the correctly selected ingredients. We will share secrets of your choice with you.

Milk

Porridges and soups can be cooked from whole, condensed and dry product. Some mothers believe that store-bought goods are worse than those bought at the market, but this is not so. Milk “from the cow” is very concentrated and perishable, so sellers dilute it with additives that are harmful to the fragile child’s body.

Pediatricians recommend preparing vermicelli milk soup from special products in cardboard packaging - this storage method guarantees quality.

If you choose powdered milk, dilute it with water until it becomes sour cream. Condensed milk soup turns out to be very sweet, so the product is diluted with liquid in a proportion of 2 tbsp. l. per glass of water.

Before introducing a new dish into your child's diet, consult an expert.

Vermicelli

Pasta is rich in gluten, which causes food allergies in infants. In addition, the flour product is high in calories and should not be given to children prone to excess weight. However, if you look, you can find gluten-free noodles on store shelves, which are not harmful to the little body.

Flour products should be introduced into the diet at the age of 9 months. Pediatricians recommend choosing durum pasta or making noodles yourself at home. Making the product is not difficult, you will need the following ingredients:

  • 300 g wheat flour;
  • 3 eggs.

Cooking steps:

  1. In a bowl, lightly beat the eggs.
  2. Gradually add flour, remembering to stir.
  3. Knead a stiff dough, place it in cellophane and leave for 30 minutes.
  4. Divide the mixture into several strips and roll them in flour.
  5. Roll out one of the parts into a layer 2 mm wide and leave on the table until completely dry.
  6. Cut it into thin spaghetti. Repeat these steps with the remaining parts.

Delicious homemade noodles are ready.

You can make vermicelli in a slow cooker according to the recipe from the cookbook.

Milk soup with noodles - general principles of preparation

• Milk soups with noodles can be prepared not only with whole cow’s milk diluted in water, but also with melted milk, which can be purchased in a store or melted at home.

• When choosing milk, pay attention to its fat content. The fattier it is, the more caloric the soup will be.

• Full-fat store-bought milk, and even more so homemade milk, always needs to be diluted, especially for preparing children's soups.

• It is best to purchase vermicelli made from durum wheat flour. Such pasta does not boil over during cooking, and soups do not turn into porridge.

• Milk soups with noodles should be quite liquid in consistency. Therefore, you need to add exactly as much pasta as recommended in the recipe. You can put less, but not more, vermicelli greatly increases, “swells”, in the liquid. The most suitable amount of noodles for soup is half a glass (two hundred grams) per liter of milk.

• There are many recipes for making milk soup with noodles, they all differ not only in ingredients, but also in methods of preparation. But, despite this, there is one general rule of preparation - the vermicelli is dipped only in boiling liquid and, when brought to readiness, it is periodically stirred so that the vermicelli do not stick together and form lumps.

Vermicelli for feeding babies

Vermicelli and pasta contain gluten, which sometimes causes allergies in babies. Gluten is quite poorly digestible, and the products themselves, due to their high calorie content, contribute to weight gain. Therefore, pasta cannot be given to a child with a gluten allergy, overweight or digestive problems. If there are no such problems, for the baby they choose pasta only from first-class durum wheat or labeled “A” or special children’s pasta.

Today, manufacturers produce special pasta for children with a safe and hypoallergenic gluten-free composition. You should start feeding your baby with this product. This vermicelli or pasta contains easily digestible carbohydrates, B vitamins, potassium, phosphorus and zinc. This composition has a positive effect on the baby’s growth, the development of the bone skeleton and muscles, the condition of hair and skin, nails and teeth. In addition, it strengthens the immune system and the body as a whole.

Vermicelli and pasta are introduced into complementary foods for children in boiled form at nine months, after the inclusion of crumbs of meat, vegetables and cereals in the diet, and soup can be prepared using pasta after ten months. Vegetable soup is prepared with this ingredient first, then chicken soup with noodles is included.

It is not recommended to give a child under two or three years of age soups with meat or fish broth. Vegetable broth is used for cooking, and meat or fish is boiled separately and then added to the finished dish.   • Water – 200 ml;

Classic recipe for milk soup with noodles for children

Before we start preparing milk soup with pasta, let's tell you a little about the choice of products for the traditional recipe.

Milk. It would seem that if we are talking about food for children, then we should choose the best possible quality without adding water. But not in this case. Baby food should not be excessively fatty, so milk should be diluted with water in any case. The proportions are approximately as follows: for 4 parts of milk from the store with a fat content of 2.5%, you need to add 1 part of water. If you take homemade milk, then feel free to dilute it with water 1 to 1. Please note that the recipe also includes butter, which also adds calories. Therefore, be sure to dilute the milk with water without worrying that the taste will not be rich.

Vermicelli. One of the problems when preparing such a milk soup is that the vermicelli does not have time to boil. Indeed, pasta cooks more slowly in milk than in water. At the same time, prolonged boiling worsens the taste and benefits of milk. To make the dish a success, choose thin noodles or shaped pasta in the shape of stars and flowers for baby food. Also remember that flour boils a lot and increases in volume. To prevent the soup from becoming too thick, follow the directions in the recipe.

What we need for 1 serving:

  • Milk 2.5% - 1 glass;
  • Water – ¼ cup;
  • Vermicelli – 1 tablespoon with top;
  • Sugar – 2 teaspoons;
  • Salt – a small pinch;
  • Butter – 5 gr.

It is better to choose a pan with a thick bottom and try not to leave it during the entire cooking. Even diluted milk can dry out and give the soup an unpleasant taste. Pour water into the bottom of the pan and place on fire. Let it boil, and then add sugar, salt and milk. As soon as the liquid begins to boil, reduce the heat to low and add the vermicelli. Leave the soup on the fire for 5-7 minutes, stirring occasionally, and then turn off the stove and let the noodles brew and soak in milk for 10-15 minutes. Before serving, place a piece of butter on each plate.

You should not cook this dish for future use. Only freshly brewed soup has the best taste. Then the pasta will swell, the starch content will go into liquid and the taste will no longer be the same.

Dairy on the menu

Before introducing foods made from fermented milk ingredients into your diet, read the recommendations of pediatricians:

  • do not give foods with milk to infants up to one year old;
  • try to introduce the components included in the recipe separately;
  • a serving of soup for a child under two years of age is 120 ml, for a child 2-3 years old - 150 ml.

Doctors advise diluting the first one with water so that it is not too concentrated and does not cause allergies.

Cook the soup ingredients separately until done and then add the milk. For children 1-3 years old, do not use condensed milk, it is an irritating component.

Beneficial features

Fermented milk product is a subject of debate among pediatricians. Some believe that a drink rich in calcium must be present in a child’s diet, while others refute this point of view.

The benefits of milk for a child’s body are invaluable, and the product itself contributes to:

  • normalization of the functions of the cardiovascular system;
  • formation of skeletal bones;
  • increasing the efficiency of the gastrointestinal tract;
  • prevention of rickets;
  • treatment of colitis, eczema and insomnia.

Doctors advise giving the drink from 3 months of age, if such a need arises.

For little ones, dilute the fermented milk product with water to reduce the amount of fat.

Harm

Some parents are of the opinion that it is impossible to develop without a drink with calcium. Few people know that the composition of human and cow's milk is different, and therefore the effect on the body is different. Possible harm of the product to a child is as follows:

  • high value of milk proteins and lactose;
  • growth hormone content;
  • allergy;
  • development of problems with the digestive organs, increased gas formation.

Toddlers under 2 years of age are prohibited from adding sugar, salt and butter to milk soup.

Feeding your baby a new food for the first time is always exciting. To make sure the product is tolerable, give your baby a tablespoon of liquid to try. Observe the little one for an hour, if during this time a rash, nausea and cough do not appear, then the body normally accepts the new ingredient.

Classic soup with noodles and milk is given to a baby at 1.5 years old.

Nuances of preparing milk soup

Before moving on to the recipes for various milk soups, you need to understand some cooking tricks. Properly prepared soup is a guarantee that your child will eat it with pleasure.

You can take three milk options as a basis:

  • whole;
  • dry;
  • condensed.

As for the first option, it is added during the cooking process. Powdered milk must first be diluted in a small volume of water until the consistency of sour cream is obtained, then add the rest of the water. The amount of milk powder and water is taken in a ratio of 50 g. product per 1 liter of water. In the latter version, this ratio is 2 tbsp. for 1 glass of water. The resulting solution is brought to a boil.

Typically, milk soups are prepared with the addition of vegetables, flour products or cereals. In the case when the soup is prepared exclusively with milk without water, then all its components must be cooked separately, until half cooked. Only after this can you add them to the soup.

To prepare this dish, thick-bottomed pans are ideal, which should be rinsed with cold water before starting cooking. This will prevent the soup from burning. It should always be cooked over low heat.

A separate important nuance in the preparation of not only milk soups, but also all other dishes intended for children of the first year of life is the minimal use of sugar and salt. To avoid making mistakes when adding these substances in their pure form, baby nutrition experts recommend using their aqueous solutions. Saline solution

To prepare the saline solution you will need 25 g. salt and half a glass of water. Salt is poured into hot water and brought to a boil. The salt should completely dissolve. This usually takes about 10 minutes.

After the solution is ready, it should be filtered using gauze folded in several layers and lined with sterile cotton wool. The next step is to obtain the original volume by adding boiling water to the solution. Next, boil the solution again. Pour the prepared saline solution into a sterile container with a closing sterile lid. It is added to food in the proportion of 1 teaspoon, which corresponds to 3 grams, per 200 grams of food.

Aqueous sugar solution

To obtain sugar syrup, you need to take half a glass of water per 100 grams of sugar. The procedure for its preparation is similar to how saline solution is made. Sugar is poured with hot water and brought to a boil. It is necessary to boil the sugar until it is completely dissolved. This will take a little longer, about 20 minutes. Then the procedure of filtering through gauze is also carried out, which must be folded in several layers and lined with sterile cotton wool. The original volume is achieved by adding boiling water. After this, the solution must be boiled again. The finished sugar syrup is poured into a sterile container with a closing lid.

Useful tips

Before you cook, you need to consider the basics that will make your soup safer.

Doctors do not recommend adding spices, salt and sugar to dishes for little ones. Milk soup for a 1 year old child can be sweetened using a sugar solution prepared exactly according to the recipe.

The aqueous composition with sugar is prepared from the following ingredients:

  • 100 g granulated sugar;
  • 0.5 tbsp. water.

How to do:

  1. Combine these 2 components in a saucepan, stir and put on fire.
  2. Boil the mixture until the sugar is completely dissolved - about 20 minutes.
  3. Strain the broth, as sediment may form at the bottom.
  4. Bring the mixture to its original volume by adding water.

This recipe is good for sweet pasta soups, but if you are preparing a vegetable dish, you will need a saline solution.

Ingredients:

  • 25 g salt;
  • 0.5 tbsp. liquids.

Step by step:

  1. Boil water in an enamel saucepan.
  2. Add salt there and stir.
  3. Wait until the component is completely dissolved, this usually takes up to 10 minutes.
  4. Remove the dishes from the heat, strain the mixture and bring to the original volume with plain water.

The solution is added in a proportion of 1 tsp. for 200 g of food.

Such additives are harmless to the child’s body due to the low spice content.

How to make homemade noodles for milk soup

Instead of vermicelli, you can use homemade noodles. It will be an excellent second course and is suitable for preparing any soup, including chicken, milk or with meatballs. Homemade noodles will be safe for your baby.

To prepare homemade noodles, take 300 grams of first-grade wheat flour and three chicken eggs. Lightly beat the eggs separately and mix with the flour. After this, knead the dough and leave it in a plastic bag for half an hour. Then the dough is cut into pieces and rolled in flour.

Each resulting piece is rolled out to a thickness of two mm and left to dry completely. While you are working with one piece, put the others in a plastic bag so that they do not get airy. When the rolled out dough dries, the pieces are rolled into sausages and cut into thin strips with a knife.

For babies

For an infant, do not add sugar, honey or butter to the food.

For a toddler 1-2 years old

At this age, a child’s body is already stronger and ready for new dishes. The ideal option for lunch or dinner is milk cereal soup.

You will need:

  • 150 g buckwheat;
  • 1.5 l milk;
  • 500 ml water.

Cooking steps:

  1. Boil buckwheat in a saucepan until tender.
  2. After all the water has evaporated, add milk.
  3. Boil the soup on the stove for 20 minutes.

For cooking, you can use corn, barley or oatmeal.

A two-year-old child may resist liquid milk. To prevent this from happening, make your little one a delicious soup with dumplings. Its preparation is not difficult, and the result will please you.

Ingredients:

  • 1 tbsp. l. semolina;
  • ½ tbsp. l. flour;
  • 1 egg;

  • 1 tsp. granulated sugar.

How to cook:

  1. First, prepare the gnocchi. Boil water, dissolve butter in it.
  2. Pour semolina into it and cook regular porridge.
  3. Beat the egg in a bowl and add it to the semolina. Add flour there, add salt and mix.
  4. In a separate bowl, combine milk, water and sugar and boil.
  5. By this time, the semolina should have cooled down. Place a teaspoon of porridge into the boiling milk mixture - this is the dumplings.
  6. Cook the soup until the dumplings float to the surface.

You can diversify the diet of a two-year-old toddler with a dairy dish with vermicelli or noodles prepared at home.

Cooking noodles

If you decide to make an important ingredient for milk soup with your own hands, then you will need the following:

  • two cups of premium wheat flour;
  • tsp salt;
  • 120 ml water at room temperature.

Eggs can also be added, but we will consider the simplest option, especially if the child does not tolerate egg yolks well.

This option for preparing a flour product would be ideal for a 1 year old child.

  1. Pour flour into a container.
  2. Add salt. Mix everything thoroughly with a whisk.
  3. Add water while stirring constantly.
  4. Knead the resulting dough and shape it into a ball.
  5. Transfer the dough into a ziplock bag. Place in the refrigerator for half an hour.
  6. Using a rolling pin, knead the dough that is still in the bag.
  7. Take out the flatbread. Sprinkle it with flour, shape it into a small rectangle, and put it back in the refrigerator for about 15 minutes.
  8. Take out the dough and roll out the mass again in the bag. Take it out onto the table and roll it out into a rectangular shape. Sprinkle with flour.
  9. Fold it several times to get a rectangle approximately the same shape as in the photo below:
  10. Cut the resulting layer in half.
  11. Cut each part into thin strips.
  12. Unwind the resulting noodles.
  13. Place the products on a container to dry.

You can adjust the length of the noodles yourself. In our case, they turned out to be quite long.

For babies

If you are preparing such a dish for a toddler who is less than a year old, then you can either buy vermicelli specially adapted for baby food, or grind it raw using a coffee grinder, for example, or use a blender to grind the finished dish.

Consider the option of using adult pasta.

You will need:

  • two teaspoons of vermicelli;
  • milk - two thirds of a glass;
  • water - one third of a glass;
  • salt.
  1. Pour water into the container and add milk.

  2. After boiling, add some salt and add vermicelli.

  3. Cook for three to four minutes.
  4. The finished dish is poured into a blender and crushed.
